    This hands-on sourdough bread class focuses on natural ingredients and practical skills. Learn how to create and care for a starter, how it helps dough rise, and the science behind it. Participants receive recipes for the starter and for sourdough bread, along with a banneton, a jar for starter, and a scraper to take home. The class runs over two days. On the first day you make the bread and let it proof overnight, and on the second day you bake. Attendance on both days is required. Bring an apron. Enrollment is limited to 10 people. The cost is $55 per person and includes the two-day class plus take-home supplies. Multiple sessions are offered.

    Returning to Saco, Maine, Carl Bledsoe brings a three-day horsemanship clinic to Setting Sun Stables as part of his GHNE teaching tour. The program centers on developing smooth, correct gait, building softness and connection, and applying principles that support both the body and mind of the horse. Riders who have trained with Carl before will delve into new techniques with more advanced instruction. Those new to his gentle, horse-first coaching will receive individualized guidance that meets each horse and rider where they are and targets personal goals. After the clinic fills, registered riders may also purchase a one-hour private lesson to consolidate the work from the clinic. The full three-day clinic is $900, and auditing is $40 per day. Carl and Tammy Bledsoe share a path that moved from the show ring to teaching and training with the horse’s well-being at the center, highlighting the versatility and talent of Tennessee Walking Horses and other gaited breeds. Carl has appeared as a guest speaker, clinician, and featured presenter at events such as the Sound Horse Conference, the Equus Film Festival, Equifest, Horse World Expo, the Georgia Horse Fair, the Southern Equine Expo, and Equine Affaire in Ohio and Massachusetts. He has judged the Appalachian Trainer Face-Off, been featured in Horse Illustrated, and received the Humane Society of the United States Humane Horseman of the Year award in 2022 for advocacy of sound, humane training.
