Etna Wine Dinner
Savor an Etna inspired, six course dinner thoughtfully paired with wines from Cottanera. It begins with 2023 Etna Bianco DOC alongside carpaccio of Spanish octopus with smoked Blue Hill Bay mussels and Maine shrimp, finished with arugula, pistachios and a bright lemon vinaigrette. The 2024 Etna Rosato DOC complements panelle with a rich mushroom ragu and grilled asparagus. For the next course, 2022 Etna Rosso DOC is served with eggplant Parmigiano accented by house pancetta and tomato. A pour of 2021 Barbazzale Catarrato accompanies chicken galentina with artichoke bottoms, green garbanzo beans, pea shoots, lemon and mint. Then 2021 Feudo di Mezzo Etna Rosso DOC pairs with busiate pasta, roasted lamb sausage, mini sweet peppers, rosemary and ricotta salata. To conclude, enjoy an Amaro Averna experience with cannoli filled with honey ricotta and finished with candied orange zest.
