    The Red River Invitational Chili Cook-Off turns the Oklahoma vs. Texas rivalry into a flavorful showdown. Sample a range of chili creations from both sides of the state line or compete for six awards, including Local First, Local Second, People’s Choice, and Best of Show. There is no registration fee. This cook-off follows its own guidelines rather than International Chili Society rules. Teams must include at least two members and cook chili from scratch on site using raw ground meat only, with no cubed meat. Finely chopped onions, peppers, and other vegetables are allowed. Beans are permitted, but fillers such as pasta, rice, or hominy are not, and commercial or prepackaged chili mixes are prohibited. Each team should prepare at least one eight-quart pot to support People’s Choice tasting, and one provided cup will be turned in for judging. The day features a drawing for cooking spots, setup, active cooking, judges’ sampling, public tasting and voting, and a winners announcement. Registration can be completed by submitting a form at Diamondback Harley-Davidson or by emailing Daniel Williams with your team name, contact information, and team members’ names.
