After plating, participants share the meal they created together, paired with a complimentary glass of wine, while an in-depth presentation delves into the featured country or region’s culinary history, notable figures, and signature recipes. Over the six weeks, the curriculum features France with gougères, French onion soup, flank steak with a shallot and red wine vinegar sauce, pommes purée, glazed herbed carrots, and cherry clafoutis. It then moves to East Asia with Vietnamese summer rolls and peanut dipping sauce, beef bulgogi, Japanese-style fried rice, a Chinese-style stir-fried vegetable medley, and black sticky rice with mango coconut semifreddo. Italy follows with ricotta, bacon, and roasted tomato bruschetta finished with a honey balsamic glaze, minestrone topped with a Parmesan crisp, pan-seared chicken breast with fettuccine all’Amatriciana, and lemon mascarpone mousse with ladyfingers. Latin America is showcased with freshly fried tortilla chips and mango corn salsa, grilled skirt steak with chimichurri, Spanish-style rice with black beans, and tres leches cake. The India session includes fried potato bondas with cucumber raita, mango chutney, chicken tikka masala, basmati rice pilaf, saag paneer, grilled naan, and mango lassi. The series concludes in Germany with krautstrudel, braised red cabbage, German potato salad, jägerschnitzel with mushroom demi-glace, and linzer torte filled with raspberry.

Every participant receives a custom medal and a performance T-shirt, along with light refreshments before and after the race including items like granola bars, fruit, water, and sports drinks.
